Air fryer lemon chicken is a tender, golden-crusted chicken dish made with a simple marinade of lemon juice, garlic, olive oil, and herbs. The air fryer ensures a crispy exterior while keeping the inside moist and juicy, creating a perfect balance of texture and flavor.


Ingredients

For the Marinade:

  • Chicken breasts or thighs (500g, boneless, skinless) – Tender and juicy.
  • Olive oil (2 tbsp) – Helps the seasoning stick and crisps the chicken.
  • Lemon juice (3 tbsp, freshly squeezed) – Adds a bright, citrusy flavor.
  • Lemon zest (1 tsp) – Intensifies the lemon taste.
  • Garlic cloves (3, minced) – Enhances the savory depth.
  • Dried oregano (1 tsp) – Adds Mediterranean flair.
  • Paprika (1 tsp, optional) – Provides a subtle smoky flavor.
  • Salt and black pepper (to taste) – Enhances all the flavors.

For Garnishing:

  • Fresh parsley (chopped, for garnish) – Adds a fresh, vibrant finish.
  • Lemon wedges (for serving) – Boosts the citrus flavor.

Instructions

Step 1: Prepare the Marinade

  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper.
  2. Add the chicken breasts or thighs, coating them evenly in the marinade.
  3. Cover and let marinate for at least 15 minutes (or up to 2 hours for deeper flavor).

Step 2: Preheat the Air Fryer

  1. Preheat the air fryer to 200°C (400°F) for 3 minutes to ensure even cooking.

Step 3: Air Fry the Chicken

  1. Lightly grease the air fryer basket with cooking spray.
  2. Place the marinated chicken in the basket in a single layer, leaving space between pieces.
  3. Air fry for 10 minutes, then flip the chicken using tongs.
  4. Cook for another 5-8 minutes, depending on thickness, until the chicken reaches an internal temperature of 75°C (165°F).

Step 4: Serve

  1. Let the chicken rest for 5 minutes to retain juices.
