Description
Blondie Cake is a sweet and chewy bar dessert similar to brownies but without cocoa. It gets its golden color and caramelized flavor from brown sugar and butter. Jamie Oliver’s version is simple yet indulgent, featuring vanilla and optional add-ins like white chocolate, nuts, or dried fruit.
Ingredients
- Unsalted Butter (150g, melted) – Adds richness and moisture.
- Light Brown Sugar (200g) – Provides a caramel-like flavor.
- Eggs (2 large, at room temperature) – Helps bind the ingredients.
- Vanilla Extract (1 tbsp) – Enhances flavor.
- Plain Flour (200g) – The base of the blondie batter.
- Baking Powder (1 tsp) – Helps with a slight rise.
- Salt (½ tsp) – Balances the sweetness.
- White Chocolate Chips (100g, optional) – Adds creamy sweetness.
- Chopped Nuts (50g, optional) – For crunch and flavor.
Instructions
Step 1: Preheat the oven
Preheat your oven to 180°C (350°F). Line a baking tin with parchment paper.
Step 2: Mix the wet ingredients
In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisking until well combined.
Step 3: Combine the dry ingredients
In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients, stirring until just combined.
Step 4: Add mix-ins (optional)
Gently fold in the white chocolate chips and chopped nuts if using.
Step 5: Bake the blondie cake
Pour the batter into the lined baking tin and spread it evenly. Bake for 20-25 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs.
Step 6: Cool and slice
Let the blondie cake cool in the tin for 10 minutes before transferring it to a wire rack. Once completely cool, slice into squares and serve.
