Description

Delia’s Braised Red Cabbage is a slow-cooked dish made with finely shredded red cabbage, apples, onions, and a mixture of sugar, vinegar, and spices. The long, gentle cooking time allows the flavors to blend together and create a rich, flavorful side dish that pairs beautifully with hearty mains like roasts or stews.

  • 1 large red cabbage (about 1kg), finely shredded
  • 2 medium onions, finely sliced
  • 2 large cooking apples, peeled, cored, and chopped
  • 3 tbsp brown sugar
  • 3 tbsp red wine vinegar or cider vinegar
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 50g butter
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat the Oven: Preheat your oven to 150°C (300°F) or gas mark 2.
  2. Prepare the Vegetables: Finely shred the red cabbage, slice the onions, and chop the apples. Set them aside.
  3. Layer the Ingredients: In a large ovenproof dish or casserole, layer the shredded cabbage, onions, and apples, sprinkling the brown sugar, ground nutmeg, ground cinnamon, ground cloves, salt, and pepper in between the layers.
  4. Add the Vinegar and Butter: Pour the red wine vinegar over the top of the cabbage mixture. Dot the butter evenly over the cabbage.
  5. Cover and Cook in the Oven: Cover the dish with a tight-fitting lid or foil. Place in the preheated oven and cook slowly for 2-2.5 hours, stirring occasionally to ensure the cabbage cooks evenly.
  6. Check and Serve: Once the cabbage is tender and has absorbed the flavors, check the seasoning. Adjust with more salt, pepper, or vinegar if necessary. Serve hot as a side dish.
