Description

Corned beef hash is a traditional dish made by frying together corned beef, potatoes, and onions. Delia Smith’s version keeps it simple and straightforward, focusing on quality ingredients and perfecting the technique to get the potatoes crispy and golden while the corned beef remains soft and flavorful. This recipe is perfect for anyone looking for a comforting, savory meal.

Ingredients

Scale
  • 450g potatoes (peeled and diced)
  • 200g corned beef (cut into chunks)
  • 1 large onion (chopped)
  • 2 tbsp vegetable oil (for frying)
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)
  • Optional: 2 eggs (fried, to serve on top)

Instructions

Step 1: Boil the Potatoes

Start by boiling the diced potatoes in a large pan of salted water for about 8-10 minutes, or until just tender. Drain and set the potatoes aside to cool slightly.

Step 2: Sauté the Onions

While the potatoes are boiling, heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Add the chopped onions and sauté for about 5 minutes until softened and starting to turn golden.

Step 3: Add the Potatoes

Once the onions are softened, add the boiled potatoes to the frying pan. Stir gently to combine them with the onions, and then let them cook for 5-7 minutes, turning occasionally, until the potatoes begin to turn golden and crisp.

Step 4: Add the Corned Beef

Once the potatoes are crispy on the outside, add the chunks of corned beef to the pan. Stir everything together gently, being careful not to break up the corned beef too much. Cook for another 5 minutes, allowing the corned beef to heat through.

Step 5: Season and Add Worcestershire Sauce

Season the hash with salt, pepper, and Worcestershire sauce. Stir gently to combine, making sure the seasoning is evenly distributed. Allow the mixture to cook for an additional 2-3 minutes, letting the flavors meld together.

Step 6: Serve

Once everything is heated through and nicely crisped, remove the corned beef hash from the heat. Garnish with freshly chopped parsley for a pop of color and flavor. If desired, top each serving with a fried egg for an extra hearty meal.
