Delia Smith’s Sausage Rolls are a traditional British snack made by wrapping sausage meat in flaky puff pastry. The sausage is seasoned with herbs and spices, and when baked, the pastry turns golden and crisp while the sausage inside stays juicy and tender. These rolls are ideal for entertaining, picnics, or as a tasty snack.
Ingredients
- Puff pastry (1 sheet): Ready-made, for quick and easy sausage rolls.
- Sausage meat (450g / 1 lb): Good-quality sausage meat or your favorite sausages, skins removed.
- Onion (1 small, finely chopped): Adds sweetness and flavor to the filling.
- Fresh parsley (1 tbsp, chopped): For a fragrant herbal note.
- Breadcrumbs (2 tbsp): To help bind the filling.
- Egg (1, beaten): To brush the pastry, give it a golden finish.
- Salt and pepper: To taste and season the sausage filling.
Instructions
1. Prepare the Sausage Filling:
- Mix the sausage meat: In a mixing bowl, combine the sausage meat, finely chopped onion, fresh parsley, and breadcrumbs. Season with salt and pepper to taste.
- Mix well: Use your hands or a spoon to thoroughly mix the ingredients together until well combined.
2. Roll Out the Pastry:
- Prepare the pastry: On a lightly floured surface, roll out the puff pastry to a rectangle about ⅛ inch thick if needed. Cut the pastry into two long strips.
3. Assemble the Sausage Rolls:
- Shape the sausage filling: Divide the sausage mixture into two equal parts and shape each into a long log.
- Place the filling: Lay one log of sausage meat down the center of each strip of pastry.
- Wrap the pastry: Brush the edges of the pastry with a little water, then fold the pastry over the sausage filling, sealing the edges tightly. Press the edges down with a fork to crimp and seal.
4. Cut and Glaze the Rolls:
- Cut into individual rolls: Slice each long roll into smaller sausage rolls, about 2 inches long.
- Brush with egg: Place the rolls on a baking sheet lined with parchment paper. Brush the tops with beaten eggs for a golden, shiny finish.
5. Bake the Sausage Rolls:
- Preheat the oven: Set the oven to 200°C (400°F).
- Bake: Place the sausage rolls in the oven and bake for 20-25 minutes, or until the pastry is golden brown and the sausage is cooked through.
