Instructions
Step 1: Preheat the oven
Preheat your oven to 200°C (180°C fan) or 400°F.
Step 2: Prepare the filling
Melt the butter in a large skillet over medium heat. Add the sliced leeks and sauté for 5-7 minutes until softened. Stir in the flour and cook for 1-2 minutes to remove the raw taste. Gradually add the milk and stock, whisking continuously to form a smooth sauce.
Step 3: Add the turkey and ham
Stir the shredded turkey, diced ham, mustard, and thyme into the sauce. Season with salt and black pepper. Simmer for 5 minutes, then remove from heat and let the mixture cool slightly.
Step 4: Assemble the pie
Transfer the filling to a baking dish. Roll out the puff pastry and place it over the filling, trimming any excess. Press the edges to seal and cut a small slit in the center to allow steam to escape. Brush the pastry with beaten egg for a golden finish.
