Ingredients

For the Filling

  • Cooked Turkey (300g, shredded or diced): The star ingredient.
  • Cooked Ham (200g, diced): Adds a savory touch.
  • Leeks (2, thinly sliced): Adds sweetness and flavor.
  • Butter (50g): For sautéing and sauce.
  • Plain Flour (2 tbsp): Thickens the sauce.
  • Milk (300ml): Forms the creamy base.
  • Chicken or Turkey Stock (200ml): Enhances the sauce.
  • Dijon Mustard (1 tsp): Adds a subtle kick.
  • Fresh Thyme (1 tsp, chopped): Optional, for herbal flavor.
  • Salt and Black Pepper (to taste)

For the Pastry

  • Puff Pastry (1 sheet, thawed if frozen): The crust for the pie.
  • Egg (1, beaten): For glazing.

Instructions

Step 1: Preheat the oven

Preheat your oven to 200°C (180°C fan) or 400°F.

Step 2: Prepare the filling

Melt the butter in a large skillet over medium heat. Add the sliced leeks and sauté for 5-7 minutes until softened. Stir in the flour and cook for 1-2 minutes to remove the raw taste. Gradually add the milk and stock, whisking continuously to form a smooth sauce.

Step 3: Add the turkey and ham

Stir the shredded turkey, diced ham, mustard, and thyme into the sauce. Season with salt and black pepper. Simmer for 5 minutes, then remove from heat and let the mixture cool slightly.

Step 4: Assemble the pie

Transfer the filling to a baking dish. Roll out the puff pastry and place it over the filling, trimming any excess. Press the edges to seal and cut a small slit in the center to allow steam to escape. Brush the pastry with beaten egg for a golden finish.

Step 5: Bake the pie

Place the pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.

Step 6: Serve

Let the pie rest for 5 minutes before serving. Serve hot with your favorite sides.
