Instructions
In a small bowl or jar, add the olive oil, vinegar, and Dijon mustard.
Stir in the minced garlic, salt, and black pepper. If using honey, add that here as well.
Whisk all ingredients vigorously until smooth and creamy. If using a jar, secure the lid and shake well for 30 seconds.
Taste your dressing and adjust vinegar, salt, or honey to suit your preference.
Pour over your salad just before serving or refrigerate for later use.
