Gordon Ramsay’s Banoffee Pie is a classic British dessert featuring a biscuit crust layered with caramel (toffee), sliced bananas, and whipped cream. It’s easy to prepare yet incredibly delicious, offering a perfect balance of sweet and creamy flavors with a buttery crunch.
Ingredients
For the Base:
- Digestive biscuits – 250g, crushed, for a buttery crust.
- Butter – 100g, melted, to bind the crust.
For the Filling:
- Sweetened condensed milk – 1 tin (400g), to make caramel.
- Bananas – 3 large, ripe but firm, for layering.
For the Topping:
- Whipping cream – 300ml, whipped to soft peaks.
- Dark chocolate – 50g, grated, for garnish (optional).
- Cocoa powder – For dusting (optional).
Instructions
Step 1: Make the Biscuit Base
- Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a zip-lock bag and rolling with a rolling pin.
- Mix the crushed biscuits with the melted butter until evenly combined.
- Press the mixture into the base of a springform or tart tin, spreading it evenly and pressing firmly with the back of a spoon.
- Chill in the refrigerator for 30 minutes to set.
Step 2: Prepare the Caramel
- Pour the sweetened condensed milk into a saucepan and heat gently over low heat, stirring continuously.
- Cook for 8–10 minutes until the mixture thickens and turns a golden caramel color. Remove from heat and let it cool slightly.
Step 3: Assemble the Pie
- Spread the caramel evenly over the chilled biscuit base.
- Slice the bananas and arrange them in a single layer over the caramel.
Step 4: Add the Cream Topping
- Whip the cream to soft peaks and spread it gently over the bananas.
Step 5: Garnish and Chill
- Sprinkle grated dark chocolate on top or dust with cocoa powder for garnish.
- Chill the pie in the refrigerator for at least 1 hour before serving.
