Gordon Ramsay’s cauliflower cheese is a baked dish where tender cauliflower florets are coated in a velvety cheese sauce made from a roux base and sharp cheese, such as cheddar or Gruyère. It’s topped with breadcrumbs or additional cheese for a golden, crispy finish.
Ingredients
For the Cauliflower:
- Cauliflower (1 large head): Cut into florets.
- Salt: To season the boiling water.
For the Cheese Sauce:
- Butter (50g): For the roux base.
- Plain flour (50g): Thickens the sauce.
- Whole milk (500ml): Creates a creamy base.
- Cheddar cheese (150g, grated): Adds rich flavor.
- Parmesan cheese (50g, grated): For depth and sharpness.
- Dijon mustard (1 teaspoon): Enhances the cheese flavor.
- Nutmeg (a pinch, optional): Adds a subtle warmth.
- Salt and black pepper: To taste.
For the Topping:
- Breadcrumbs (50g): For a crispy topping.
- Cheddar cheese (50g, grated): To create a golden crust.
Instructions
Step 1: Prepare the cauliflower
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5 minutes, or until just tender. Drain well and set aside.
Step 2: Make the cheese sauce
- In a medium saucepan, melt the butter over medium heat.
- Add the flour and whisk continuously for 1–2 minutes to form a roux.
- Gradually add the milk, whisking constantly to prevent lumps. Simmer for 3–4 minutes until the sauce thickens.
- Stir in the grated cheddar, Parmesan, Dijon mustard, and nutmeg (if using). Season with salt and black pepper to taste.
Step 3: Assemble the dish
- Preheat your oven to 200°C (180°C fan, 400°F).
- Place the cooked cauliflower florets into a baking dish, arranging them evenly. Pour the cheese sauce over the top, ensuring all florets are coated.
Step 4: Add the topping
- Sprinkle the breadcrumbs and grated cheddar cheese evenly over the top.
Step 5: Bake the cauliflower cheese
- Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbling.
Step 6: Serve
- Allow the dish to cool slightly before serving. Pair it with a fresh green salad or as a side dish to roast meats.
