Hairy Bikers Carrot and Coriander Soup is a smooth, creamy vegetable soup made primarily from carrots and fresh coriander. The natural sweetness of the carrots blends beautifully with the earthy, citrus notes of coriander, creating a light yet flavorful dish. 			- 1 tbsp olive oil – for sautéing.
- 1 large onion – finely chopped.
- 2 garlic cloves – minced.
- 600g (21 oz) carrots – peeled and chopped.
- 1 potato – peeled and diced, adds creaminess to the soup.
- 1 liter (35 fl oz) vegetable stock – the base for the soup.
- 1 bunch fresh coriander – chopped, with some reserved for garnish.
- 1 tsp ground coriander – for extra depth of flavor.
- Salt and pepper – to taste, for seasoning.
- Fresh cream (optional) – for a richer, creamy finish.
Instructions
Step 1: Sauté the onion and garlic
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and fragrant.
Step 2: Add the carrots and potato
- Stir in the chopped carrots and diced potato, cooking for another 3-4 minutes to allow them to soften slightly.
Step 3: Pour in the vegetable stock
- Add the vegetable stock, making sure the vegetables are fully submerged. Stir in the ground coriander, and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes until the vegetables are tender.
Step 4: Blend the soup
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully blend the soup in batches using a regular blender.
Step 5: Stir in the fresh coriander
- Once the soup is smooth, stir in the chopped fresh coriander. Season with salt and pepper to taste. For a creamier finish, you can also stir in a little fresh cream at this stage.
Step 6: Serve
- Ladle the Hairy Bikers Carrot and Coriander Soup into bowls, garnish with the reserved fresh coriander, and serve hot with crusty bread or a side salad.
