For the Cake:

Instructions
Step 1: Preheat the Oven
- Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line two 20cm round cake tins with parchment paper.
Step 2: Prepare the Cake Batter
- In a large mixing bowl, whisk together the flour, baking powder, bicarbonate of soda, ground cinnamon, ground nutmeg, and caster sugar.
- In a separate bowl, whisk the eggs, vegetable oil, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until combined.
- Fold in the grated carrots and chopped walnuts (if using) until evenly distributed throughout the batter.
Step 3: Bake the Cake
- Divide the batter evenly between the two prepared cake tins, smoothing the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean.
