To make one large pot (serves 4-6), gather the following ingredients:

  • 500g (1 lb) fresh mushrooms (button, chestnut, or mixed), sliced: The key ingredient that gives the soup its depth of flavor.
  • 1 large onion, finely chopped: Adds sweetness and flavor.
  • 2 cloves garlic, minced: Provides an aromatic base.
  • 2 tbsp butter or olive oil: For sautéing the mushrooms and onions.
  • 1 liter (4 cups) vegetable or chicken stock: Forms the base of the soup.
  • 150ml (½ cup) double cream or crème fraîche: Adds creaminess to the soup.
  • 2 tbsp fresh parsley, chopped (optional): For garnish and added freshness.
  • Salt and pepper, to taste: For seasoning.

Instructions

Step 1: Sauté the Vegetables

  1. Heat the butter or olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté for 5-7 minutes until soft and translucent.
  3. Stir in the sliced mushrooms and cook for another 5-8 minutes until the mushrooms have released their moisture and turned golden brown.

Step 2: Add the Stock and Simmer

  1. Pour in the vegetable or chicken stock and bring the mixture to a boil.
  2. Reduce the heat and let the soup simmer for 15 minutes, allowing the flavors to meld.

Step 3: Blend the Soup (Optional)

  1. For a smooth soup, use an immersion blender or transfer the soup to a blender and blend until smooth.
  2. If you prefer a chunkier texture, leave the soup as it is or blend only part of it to retain some mushroom pieces.

Step 4: Add Cream and Season

  1. Stir in the double cream or crème fraîche to give the soup a rich, creamy consistency.
  2. Taste the soup and season with salt and pepper to your liking.

Step 5: Garnish and Serve

  1. Ladle the soup into bowls and garnish with freshly chopped parsley, if desired.
