Ingredients
- Salmon fillets (4): Skin-on for added flavor and crispiness.
- New potatoes (500g): Halved or quartered, for a hearty base.

- Red onion (1, large): Sliced into wedges for a caramelized touch.
- Green beans (200g): Trimmed, for freshness and crunch.
- Olive oil (3 tablespoons): For roasting and flavor.
- Garlic (2 cloves, minced): Adds a savory kick.
- Fresh rosemary or thyme (2 sprigs): Aromatic seasoning.
- Lemon (1): Sliced and juiced, for brightness.
- Salt and black pepper: To taste.
Instructions
Step 1: Preheat the oven
- Preheat your oven to 200°C (400°F).
Step 2: Prepare the vegetables
- In a mixing bowl, toss the new potatoes, cherry tomatoes, red onion, and green beans with 2 tablespoons of olive oil, minced garlic, salt, and pepper.
Step 3: Roast the vegetables
- Spread the vegetables evenly on a large baking tray. Place the lemon slices and sprigs of rosemary or thyme among the vegetables.
- Roast in the oven for 20 minutes.
Step 4: Add the salmon
- Remove the tray from the oven and place the salmon fillets on top of the vegetables, skin-side down. Drizzle the salmon with the remaining olive oil and a squeeze of fresh lemon juice. Season with salt and pepper.
Step 5: Roast the salmon
- Return the tray to the oven and roast for another 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Step 6: Serve
- Remove from the oven and let it rest for 2 minutes. Serve the salmon fillets with the roasted vegetables, garnished with additional lemon wedges or fresh herbs.
