Ingredients
For the Filling:

Instructions
Step 1: Prepare the mashed potatoes
- Peel and chop the potatoes into even-sized pieces.
- Boil them in salted water for 15–20 minutes, or until tender.
- Drain and mash the potatoes with butter, milk, salt, and pepper until smooth. Set aside.
Step 2: Cook the filling
- Heat olive oil in a large skillet over medium heat.
- Add the onion, carrot, celery, and garlic. Sauté for 5–7 minutes until softened.
- Add the minced beef, breaking it up with a wooden spoon, and cook until browned.
- Stir in the tomato purée, Worcestershire sauce, and thyme. Cook for 2 minutes.
- Pour in the beef stock, reduce the heat, and simmer for 15–20 minutes, allowing the flavors to meld. Season with salt and pepper.
Step 3: Assemble the pie
- Preheat your oven to 200°C (400°F).
- Spoon the beef filling into an ovenproof dish, spreading it out evenly.
- Top with the mashed potatoes, using a fork to create ridges for a crispy finish.
Step 4: Bake the pie
- Place the dish in the oven and bake for 20–25 minutes, or until the top is golden brown and the filling is bubbling.
Step 5: Serve
- Allow the cottage pie to rest for 5 minutes before serving. Pair with steamed vegetables or a crisp salad for a complete meal.
