Description

James Martin’s Pear Tarte Tatin is a delicious upside-down tart made by caramelizing pears in butter and sugar, then covering them with a puff pastry crust before baking. Once cooked, the tart is inverted to reveal beautifully caramelized pears on top. The contrast between the crispy puff pastry and the soft, sweet pears makes this dessert irresistible.

Ingredients

  • Puff Pastry: A sheet of ready-made puff pastry works best for convenience.
  • Pears: Choose firm, ripe pears like Bosc or Anjou for the best texture.
  • Butter: Unsalted butter for richness and caramelization.
  • Sugar: Granulated sugar to make the caramel.
  • Vanilla Extract (Optional): Adds a subtle depth of flavor.
  • Lemon Juice: Helps balance the sweetness and prevents the pears from browning.
  • Cinnamon (Optional): A warm spice that complements the pears beautifully.

Instructions

  1. Preheat the Oven: Set your oven to 200°C (400°F) to ensure it’s hot enough to caramelize the pears and bake the pastry properly.
  2. Prepare the Puff Pastry: Roll out the puff pastry sheet slightly larger than the size of your pan and set it aside in the refrigerator to keep it cold.
  3. Caramelize the Sugar: In an oven-safe frying pan or skillet, melt the butter over medium heat. Add the sugar and cook, stirring constantly, until the sugar dissolves and turns golden brown, forming a caramel. Remove from heat once caramelized.
  4. Prepare the Pears: While the sugar is caramelizing, peel and core the pears. Slice them in half or into thick wedges.
  5. Arrange the Pears: Place the pears cut side down into the caramel, arranging them in a circular pattern so they fit snugly.
  6. Cover with Puff Pastry: Carefully place the puff pastry over the pears, tucking the edges around the fruit to encase it.
  7. Bake the Tart: Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed up.
  8. Invert the Tart: Once baked, let the tart cool slightly before carefully inverting it onto a serving plate. The caramelized pears will be on top.
  9. Cool and Serve: Allow the tart to cool for a few minutes before slicing and serving. Pair it with whipped cream, crème fraîche, or vanilla ice cream for an extra indulgent treat.
