Ingredients
- Fresh tomatoes (1kg, roughly chopped): Provides a sweet and rich base for the soup.
- Onion (1 large, chopped): Adds a savory depth to the flavor.
- Garlic (2 cloves, minced): Enhances the overall flavor with a mild kick.
- Olive oil (2 tbsp): For sautéing the onions and garlic.
- Vegetable or chicken stock (750ml): Forms the liquid base of the soup.
- Fresh basil (a large handful, torn): Adds a fragrant, herbal note that complements the tomatoes.
- Salt and pepper: To taste.
- Sugar (1 tsp, optional): To balance the acidity of the tomatoes, if needed.
- Double cream (optional, 100ml): For added richness and a creamy texture.
- Fresh basil leaves (for garnish): Adds a fresh, bright finish.
Instructions
- Sauté the onions and garlic: Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and translucent.
- Add the tomatoes: Stir in the chopped tomatoes and cook for another 5 minutes until they start to break down and release their juices.
- Add the stock: Pour in the vegetable or chicken stock and bring the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes, allowing the tomatoes to soften completely.
- Blend the soup: Remove the pot from the heat and use a hand blender to blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.
- Stir in the basil: Tear the fresh basil leaves into the soup and stir. Allow the basil to wilt and infuse the soup with its flavor. Add the optional cream at this stage if you prefer a richer soup.
- Season and adjust: Taste the soup and season with salt, pepper, and sugar if necessary. If the soup is too thick, you can add a little more stock or water to reach your desired consistency.
- Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Serve hot with crusty bread or as a light starter for dinner.
