Jamie Oliver’s Air Fryer Scones are a modern twist on the classic British scone. By using an air fryer, you can achieve a perfect bake in less time and with less fuss than traditional oven-baked scones. The air fryer gives the scones a crisp exterior while keeping the inside soft and fluffy, making them a delightful treat any time of day.

For the Scones:
- 250g self-raising flour
- 50g unsalted butter, cold and diced
- 2 tbsp caster sugar
- 150ml milk (plus a little extra for brushing)
- A pinch of salt
- 1 tsp baking powder
- Optional: 50g sultanas or raisins
For Serving:
- Clotted cream
- Jam (strawberry or raspberry)
Instructions
- Preheat the Air Fryer: Preheat your air fryer to 180°C (350°F) for a few minutes while you prepare the scone dough.
- Mix the Dry Ingredients: In a large mixing bowl, sift together the self-raising flour, baking powder, and a pinch of salt. Add the cold, diced butter to the bowl.
- Rub in the Butter: Using your fingertips, rub the butter into the flour mixture until it resembles fine breadcrumbs.
- Add the Sugar: Stir in the caster sugar, and if you’re using them, the sultanas or raisins.
- Mix in the Milk: Gradually pour in the milk, mixing with a knife or spatula until the dough begins to come together. The dough should be soft but not sticky.
- Knead and Roll the Dough: Lightly flour a work surface and gently knead the dough a few times until smooth. Roll out the dough to about 2 cm (3/4 inch) thick.
- Cut Out the Scones: Use a pastry cutter or a knife to cut out scones from the dough. Gather any remaining dough, re-roll, and cut out additional scones.
- Prepare for Air Frying: Place the scones in the air fryer basket on a piece of baking parchment or a silicone mat, making sure they’re not touching each other. Brush the tops with a little milk for a golden finish.
- Air Fry the Scones: Cook the scones in the preheated air fryer at 180°C (350°F) for 10-12 minutes, or until they are golden brown and well-risen.
- Cool: Remove the scones from the air fryer and let them cool on a wire rack for a few minutes before serving.
