Instructions
- Sauté the onions and garlic: In a large pot, melt the butter and olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent. Add the minced garlic and cook for an additional 1-2 minutes.
- Cook the broccoli: Add the broccoli florets to the pot and stir well. Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes, or until the broccoli is tender.
- Blend the soup: Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, you can blend half of the soup and leave the rest as is.
- Add the Stilton: Stir in the crumbled Stilton cheese, allowing it to melt into the soup. If you’re adding cream, stir it in at this point to make the soup extra creamy.
- Season and taste: Season the soup with salt and pepper to taste, adjusting the seasoning as needed.
