Description
Jamie Oliver’s Coronation Chicken is a creamy and mildly spiced dish where cooked chicken is tossed in a mixture of yogurt, curry powder, mango chutney, and fresh herbs. This recipe adds a fresh, zesty twist to the traditional coronation chicken by using ingredients that lighten up the classic recipe while keeping the rich, delicious flavors intact.
Ingredients
- Cooked chicken (500g / 1 lb): Shredded or diced, using leftover roast chicken works perfectly.
- Natural yogurt (150ml / ⅔ cup): A healthy alternative to mayonnaise, adding creaminess.
- Mango chutney (2 tbsp): Adds a fruity sweetness to the sauce.
- Curry powder (1 tbsp): For mild warmth and spice.
- Lemon juice (1 tbsp): Balances the sweetness with a bit of tang.
- Fresh coriander (a handful): Chopped, to add a burst of fresh flavor.
- Salt and pepper: To taste, for seasoning.
Instructions
- Prepare the chicken: Shred or dice the cooked chicken into bite-sized pieces and place it in a mixing bowl.
- Mix the sauce: In a separate bowl, combine the natural yogurt, mango chutney, curry powder, and lemon juice. Stir until smooth and fully combined.
- Toss the chicken: Add the shredded chicken to the yogurt sauce and mix until the chicken is evenly coated.
- Season and garnish: Taste the dish and season with salt and pepper as needed. Stir in the chopped coriander.
- Serve: Serve the Coronation Chicken chilled, either in sandwiches, wraps, or on a bed of greens for a refreshing salad.
