Description

Jamie Oliver’s Greek Potatoes take classic roasted potatoes to a new level by infusing them with Mediterranean flavors. The potatoes are roasted in olive oil, garlic, lemon juice, and oregano, allowing them to absorb these bright, zesty flavors. The result is crispy, golden potatoes with a tender center that is bursting with the taste of herbs and citrus. This simple yet flavorful dish is a perfect addition to any meal.

Ingredients

  • Potatoes (1.5 kg, peeled and cut into wedges): Use starchy potatoes like Maris Piper for the best texture.
  • Olive oil (4 tablespoons): Helps to achieve a golden, crispy finish.
  • Garlic cloves (4, minced): Adds a rich, savory flavor to the dish.
  • Lemon juice (from 2 large lemons): Provides a fresh, zesty flavor that complements the potatoes.
  • Chicken or vegetable stock (200ml): Adds moisture and flavor while cooking.
  • Oregano (1 tablespoon, dried or fresh): Classic Greek herb that gives the dish its Mediterranean flavor.
  • Salt and pepper (to taste): Essential for seasoning and enhancing the flavors.
  • Fresh parsley (optional, chopped for garnish): Adds a fresh, herby finish.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 200°C (400°F) and lightly grease a roasting tray or baking dish with olive oil.

Step 2: Prepare the potatoes

  • Peel the potatoes and cut them into large wedges.
  • Place the potato wedges in a large mixing bowl.

Step 3: Season the potatoes

  • Ensure all the potatoes are evenly coated with the seasoning.

Step 4: Add the stock

  • Pour the chicken or vegetable stock into the roasting tray or baking dish.
  • Spread the seasoned potatoes evenly in the tray, ensuring they are in a single layer for even roasting.

Step 5: Roast the potatoes

  • Place the roasting tray in the preheated oven.
  • Bake for 50-60 minutes, turning the potatoes halfway through to ensure they crisp up on all sides.

Step 6: Garnish and serve

  • Once the potatoes are golden and crispy, remove them from the oven.
  • Garnish with fresh parsley if desired.
  • Serve hot as a side dish to grilled meats, fish, or a fresh salad.
