Jamie Oliver’s mint sauce is a fresh herb condiment made by blending or finely chopping fresh mint leaves and mixing them with vinegar, sugar, and boiling water. It’s traditionally served with roast lamb, but also pairs beautifully with vegetables, peas, and even grilled halloumi. His version emphasizes natural, punchy flavors and simplicity.

Fresh Mint Leaves (30g / about 1 cup packed, finely chopped)

Boiling Water (3 tbsp)

White Wine Vinegar or Malt Vinegar (3 tbsp)

Caster Sugar (2 tsp)

Salt (a small pinch, optional)
Instructions
Rinse and dry the mint leaves, then remove the stems. Finely chop the leaves using a sharp knife or herb scissors.
Place the caster sugar and boiling water into a small bowl. Stir until the sugar is fully dissolved.
Stir in the vinegar and the finely chopped mint leaves. Add a pinch of salt if desired. Mix well.
Allow the sauce to sit at room temperature for 10–15 minutes before serving to let the flavors blend. Adjust seasoning to taste.
