Ingredients
- Sausages (500g / 1.1 lbs): Choose your favorite variety—pork, beef, or vegetarian.
- Onions (2 large): Thinly sliced, adding sweetness to the gravy.
- Garlic (2 cloves): Minced, for added depth of flavor.
- Butter (50g / 3.5 tbsp): For the mash and gravy.
- Plain flour (2 tbsp): To thicken the gravy.
- Beef or vegetable stock (500ml / 2 cups): For a rich, savory gravy.
- Milk (100ml / ½ cup): To make the mashed potatoes creamy.
- Potatoes (1kg / 2.2 lbs): Peeled and chopped, for the mash topping.
- Fresh thyme (optional, 1 tsp): For added flavor.
- Salt and pepper: To taste, for seasoning.
- Cheddar cheese (optional, 100g / 3.5 oz, grated): For a cheesy topping.
Instructions
1. Cook the Sausages:
- Brown the sausages: Heat a large frying pan over medium heat and add a little oil. Brown the sausages on all sides for about 5-7 minutes, then remove and set aside.
2. Sauté the Onions:
- Cook the onions: In the same pan, add the butter and sliced onions. Cook on low heat for 10-15 minutes until softened and caramelized.
- Add the garlic: Stir in the minced garlic and cook for another minute.
3. Make the Gravy:
- Add the flour: Stir the flour into the onions and cook for 1-2 minutes to form a roux.
- Add the stock: Gradually pour in the stock, whisking to avoid lumps, and bring the mixture to a simmer. Cook for 5 minutes until the gravy has thickened.
- Season: Stir in the thyme (if using) and season with salt and pepper.
4. Make the Mashed Potatoes:
- Boil the potatoes: In a large pot of salted water, boil the chopped potatoes for 15-20 minutes or until tender.
- Mash the potatoes: Drain the potatoes and mash them with butter, milk, salt, and pepper until smooth and creamy.
5. Assemble the Pie:
- Preheat the oven: Set the oven to 200°C (400°F).
- Layer the sausages and gravy: Place the browned sausages into a baking dish and pour the onion gravy over them.
- Top with mashed potatoes: Spread the creamy mashed potatoes over the sausages and gravy, smoothing them with a spoon.
- Optional cheesy topping: Sprinkle-grated cheddar cheese on top for extra flavor.
6. Bake the Pie:
- Bake: Place the pie in the preheated oven and bake for 20-25 minutes, or until the top is golden and crispy.
- Cool slightly: Let the pie rest for a few minutes before serving.
