Ingredients

For the Chicken:

  • Chicken breasts (2 large, boneless, skinless, sliced in half lengthwise) – Tender and juicy.
  • Salt and black pepper (to taste) – Enhances flavor.
  • Paprika (1 tsp, optional) – Adds a subtle smoky flavor.
  • Olive oil (2 tbsp) – For searing the chicken.
  • Butter (1 tbsp) – Adds richness.

For the Creamy Sauce:

  • Garlic cloves (3, minced) – Provides depth of flavor.
  • Sun-dried tomatoes (½ cup, chopped) – Adds a tangy sweetness.
  • Chicken broth (1 cup) – Creates a flavorful base.
  • Heavy cream (¾ cup) – Makes the sauce creamy and smooth.
  • Parmesan cheese (½ cup, grated) – Adds a savory, cheesy kick.
  • Dried oregano (1 tsp) – Brings a Mediterranean touch.
  • Crushed red pepper flakes (½ tsp, optional) – For a little heat.
  • Fresh basil or parsley (for garnish) – Adds freshness.

Instructions

Step 1: Prepare the Chicken

  1. Season the chicken breasts with salt, black pepper, and paprika on both sides.
  2. Heat 2 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  3. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.

Step 2: Make the Creamy Sauce

  1. In the same pan, add the minced garlic and cook for 30 seconds until fragrant.
  2. Stir in the chopped sun-dried tomatoes and cook for 1 minute.
  3. Pour in the chicken broth and scrape the bottom of the pan to deglaze. Simmer for 2 minutes.
  4. Lower the heat and add heavy cream, parmesan cheese, oregano, and red pepper flakes (if using). Stir well.
  5. Simmer for 3-4 minutes until the sauce thickens slightly.

Step 3: Simmer the Chicken

  1. Return the seared chicken to the pan, coating it in the sauce.
  2. Cover and let it simmer for 5 minutes until the chicken is fully cooked.
  3. Garnish with fresh basil or parsley and serve hot.

Step 4: Serve

  1. Serve with pasta, rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
