Ingredients

    • Cod fillets – 4 (about 150–180g each)

    • Olive oil – 2 tablespoons

    • Lemon – zest and juice of 1

    • Garlic – 1 clove, minced (optional)

    • Fresh parsley – 2 tablespoons, finely chopped

    • Salt and black pepper – to taste

    • Optional breadcrumb topping:
        • Fresh breadcrumbs – 50g (about ½ cup)

        • Butter – 1 tablespoon, melted

        • Grated Parmesan – 2 tablespoons (optional)


Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 200°C (180°C fan) or 400°F.

  • Lightly grease a baking dish with a drizzle of olive oil or line with parchment.

Step 2: Season the Cod

  • Pat the cod fillets dry with kitchen paper.

  • Place in the baking dish, skin-side down if applicable.

  • Drizzle with olive oil, lemon juice, and scatter over zest.

  • Season with salt, pepper, and chopped parsley.

  • Optional: Add garlic or a thin lemon slice on each fillet.

Step 3: Prepare the Breadcrumb Topping (Optional)

  • In a small bowl, mix breadcrumbs with melted butter and Parmesan.

  • Sprinkle the topping over each fillet evenly for a golden crust.

Step 4: Bake the Cod

  • Bake uncovered for 12–15 minutes, or until the fish flakes easily with a fork and is opaque throughout.

  • If using topping, broil for an extra 2 minutes at the end for a crisp finish.

Step 5: Serve

  • Carefully transfer cod to plates and spoon over any juices.

  • Garnish with extra parsley or lemon wedges.

  • Serve hot with your chosen sides.
