Ingredients

  • Potatoes (1kg, peeled and chopped): Use a starchy potato like Maris Piper for a fluffy mash.
  • Cheddar Cheese (200g, grated): A strong, mature cheddar works best for a rich flavor.
  • Milk (150ml): To make the mashed potatoes creamy.
  • Butter (50g): Adds richness to the mash and helps create a golden top.
  • Onion (1 large, finely chopped): Adds sweetness and depth to the filling.
  • Mustard Powder (1 teaspoon): For a subtle kick that complements the cheese.
  • Egg Yolk (1): For brushing the top to achieve a golden, crispy finish.
  • Salt and Pepper: To taste, for seasoning.

Instructions

Step 1: Boil the Potatoes

  • Place the peeled and chopped potatoes in a large pot of salted water.
  • Bring to a boil and cook for 15-20 minutes, or until the potatoes are tender.
  • Drain the potatoes and allow them to steam dry for a few minutes.

Step 2: Sauté the Onion

  • While the potatoes are boiling, melt a knob of butter in a frying pan over medium heat.
  • Add the finely chopped onion and cook for 10 minutes or until soft and golden. Set aside.

Step 3: Mash the Potatoes

  • Mash the boiled potatoes with the butter and milk until smooth and creamy.
  • Season with salt, pepper, and mustard powder for added flavor.

Step 4: Mix in the Cheese and Onions

  • Stir in the grated cheddar cheese and sautéed onions to the mashed potatoes, reserving a handful of cheese for the topping.
  • Mix everything well until combined.

Step 5: Assemble the Pie

  • Preheat your oven to 200°C (180°C fan).
  • Transfer the mashed potato mixture into a greased pie dish, spreading it out evenly.
  • Sprinkle the reserved cheese on top.
  • Brush the surface with egg yolk to create a golden finish when baked.

Step 6: Bake the Cheese and Potato Pie

  • Place the pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
  • Remove from the oven and let the pie cool slightly before serving.
