  • 225g self-raising flour
  • 1 tsp baking powder
  • 50g cold unsalted butter, cubed
  • 100g cheddar cheese, grated
  • 1/2 tsp salt
  • 100ml milk
  • 1 egg, beaten
  • 1/2 tsp mustard powder (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat the oven to 220°C (200°C fan) or 425°F.
  2. Sift the flour and baking powder into a mixing bowl.
  3. Add the cubed butter and rub it in with your fingertips until the mixture resembles breadcrumbs.
  4. Mix in the grated cheese, salt, mustard powder, and cayenne pepper.
  5. Make a well in the center and add the milk.
  6. Stir until a soft dough forms, being careful not to overwork it.
  7. Lightly flour your work surface and gently knead the dough until smooth.
  8. Roll out the dough to about 2 cm thickness.
  9. Cut out scones using a round cutter and place them on a baking tray lined with parchment paper.
  10. Brush the tops with the beaten egg for a golden finish.
  11. Bake in the preheated oven for 12-15 minutes until golden brown.
