Instructions
- Melt the chocolate: Break the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pan of simmering water (making sure the bottom of the bowl doesn’t touch the water) and stir occasionally until fully melted. Remove from heat and let cool slightly.
- Separate the eggs: In one bowl, separate the egg whites from the yolks. Set aside the egg whites in a large mixing bowl. Add the egg yolks to the melted chocolate and stir until fully combined.
- Whisk the egg whites: Using a whisk or electric mixer, whisk the egg whites to stiff peaks. Gradually add the sugar while whisking until the mixture becomes glossy.
- Whip the cream: In another bowl, whip the double cream until soft peaks form.
- Combine the ingredients: Fold the whipped cream into the chocolate mixture gently to avoid deflating it. Then carefully fold in the egg whites, a little at a time, until the mixture is smooth and light.
- Chill the mousse: Spoon the mousse into individual serving glasses or ramekins. Refrigerate for at least 2 hours or until set.
- Serve and garnish: Just before serving, you can top the mousse with whipped cream or chocolate shavings for an extra touch of elegance.
