Ingredients

Instructions

  1. Melt the chocolate: Break the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pan of simmering water (making sure the bottom of the bowl doesn’t touch the water) and stir occasionally until fully melted. Remove from heat and let cool slightly.
  2. Separate the eggs: In one bowl, separate the egg whites from the yolks. Set aside the egg whites in a large mixing bowl. Add the egg yolks to the melted chocolate and stir until fully combined.
  3. Whisk the egg whites: Using a whisk or electric mixer, whisk the egg whites to stiff peaks. Gradually add the sugar while whisking until the mixture becomes glossy.
  4. Whip the cream: In another bowl, whip the double cream until soft peaks form.
  5. Combine the ingredients: Fold the whipped cream into the chocolate mixture gently to avoid deflating it. Then carefully fold in the egg whites, a little at a time, until the mixture is smooth and light.
  6. Chill the mousse: Spoon the mousse into individual serving glasses or ramekins. Refrigerate for at least 2 hours or until set.
  7. Serve and garnish: Just before serving, you can top the mousse with whipped cream or chocolate shavings for an extra touch of elegance.
