Ingredients

Here’s what you’ll need to bake these soft, flavorful cinnamon rolls:

For the Dough:

  • Strong white bread flour (500g): Provides structure for a fluffy roll.
  • Milk (300ml, warm): This helps activate the yeast and enriches the dough.
  • Unsalted butter (50g, melted): Adds richness and softness.
  • Caster sugar (50g): Sweetens the dough.
  • Egg (1 large, beaten): Adds richness and helps bind the dough.
  • Salt (1 tsp): Balances the sweetness.
  • Instant yeast (1 sachet, about 7g): Helps the dough rise.

For the Cinnamon Filling:

  • Unsalted butter (50g, softened): Creates a rich, buttery filling.
  • Brown sugar (100g): Adds sweetness and caramelizes during baking.
  • Ground cinnamon (2 tbsp): Provides warm, aromatic flavor.

For the Glaze:

  • Icing sugar (100g): For a sweet, smooth glaze.
  • Milk (1-2 tbsp): Thins the glaze to the desired consistency.
  • Vanilla extract (½ tsp): Adds a hint of vanilla flavor.

Instructions

Step 1: Prepare the Dough

  • In a mixing bowl, combine the strong white bread flour, caster sugar, and salt.
  • Add the instant yeast to one side of the bowl, away from the salt.
  • Pour in the warm milk, melted butter, and beaten egg. Mix until the dough starts to come together.

Step 2: Knead the Dough

  • Knead the dough by hand on a lightly floured surface for 10 minutes, or use a stand mixer with a dough hook for 5-6 minutes until the dough is smooth and elastic.
  • Form the dough into a ball, place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-1.5 hours or until it doubles in size.

Step 3: Prepare the Cinnamon Filling

  • In a small bowl, mix the softened butter, brown sugar, and ground cinnamon until combined and spreadable.

Step 4: Roll Out the Dough

  • Once the dough has doubled in size, punch it down to release air and roll it out on a floured surface into a rectangle about 16×12 inches.

Step 5: Add the Filling

  • Spread the cinnamon filling evenly over the rolled-out dough, leaving a small border along the edges.
  • Roll the dough up tightly from the long side to form a log.

Step 6: Slice and Arrange the Rolls

  • Slice the log into 12 equal pieces and arrange the rolls in a greased 9×13-inch baking dish.
  • Cover the dish with a cloth and let the rolls rise for another 30-40 minutes until puffy.

Step 7: Bake the Cinnamon Rolls

  • Preheat your oven to 180°C (350°F).
  • Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown.

  • While the rolls are baking, mix the icing sugar, milk, and vanilla extract in a bowl until smooth.
