For the Dough:
- 450g (3 ½ cups) strong white bread flour: For structure and a light texture.
- 1 tsp salt: Enhances the flavor of the dough.
- 7g (1 packet) fast-action dried yeast: Helps the dough rise and become fluffy.
- 50g (¼ cup) caster sugar: Sweetens the dough slightly.
- 50g (¼ cup) unsalted butter, melted: Adds richness and softness to the dough.
- 250ml (1 cup) warm milk: Activates the yeast and adds moisture.
- 1 large egg: Helps bind the dough and adds extra richness.
For the Coconut Filling:
- 100g (1 cup) desiccated coconut: Provides a sweet, tropical flavor and texture.
- 75g (⅓ cup) caster sugar: Sweetens the filling.
- 2 tbsp milk: Adds moisture to the filling and helps bind it.
For the Glaze:
- 2 tbsp milk: To brush the buns for a golden finish.
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine 450g (3 ½ cups) strong white bread flour, 1 tsp salt, 7g fast-action dried yeast, and 50g (¼ cup) caster sugar.
- Mix 50g (¼ cup) melted butter, 250ml (1 cup) warm milk, and 1 beaten egg in a separate bowl.
- Gradually add the wet ingredients to the dry mixture, stirring to form a soft dough.
- Knead the dough by hand for about 10 minutes or use an electric mixer with a dough hook for 5-7 minutes until the dough is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Step 2: Prepare the Coconut Filling
- In a small bowl, mix together 100g (1 cup) desiccated coconut and 75g (⅓ cup) caster sugar.
- Stir in 2 tbsp milk to form a moist, crumbly filling.
Step 3: Roll and Fill the Dough
- Once the dough has risen, punch it down to release the air.
- On a lightly floured surface, roll out the dough into a rectangle, about 30x40cm (12×16 inches) in size.
- Spread the coconut filling evenly over the dough, leaving a small border around the edges.
Step 4: Shape the Buns
- Starting from one of the long edges, roll the dough tightly into a log.
- Cut the log into 12 equal pieces using a sharp knife.
- Place the buns, cut side up, on a parchment-lined baking tray.
Step 5: Second Rise
- Cover the buns with a damp cloth and let them rise for another 30-40 minutes, or until they have puffed up.
Step 6: Bake the Coconut Buns
- Preheat your oven to 200°C (400°F).
- Brush the tops of the buns with 2 tbsp milk for a golden finish.
- Bake for 15-18 minutes, or until the buns are golden brown on top and cooked through.
