Instructions

1. Prepare the potatoes:

Peel and dice the potatoes into small cubes. Bring a pot of salted water to a boil, and parboil the diced potatoes for 5-7 minutes until they are just tender but not fully cooked. Drain and set aside.

2. Fry the onions:

Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the chopped onions and cook for 5 minutes until they become soft and golden.

3. Crisp the potatoes:

Add the parboiled potatoes to the pan with another tablespoon of olive oil. Fry the potatoes for 10-15 minutes, stirring occasionally, until they become golden and crispy on the outside.

4. Add the corned beef:

Once the potatoes are golden and crisp, add the diced corned beef to the pan. Stir well and cook for another 5-7 minutes until the corned beef is heated through and slightly crisp on the edges.

5. Season and serve:

Season the hash with salt and pepper to taste. For an added touch, garnish with fresh parsley or chives. For extra richness, top each serving with a fried egg.
