  • 50g Caster Sugar: Sweetens the biscuits.
  • 2 tbsp Golden Syrup: Adds moisture and a slight chew to the biscuits.

Instructions

Step 1. Preheat the Oven

Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper to prevent sticking.

Step 2. Prepare the Dry Ingredients

In a mixing bowl, sift together the self-raising flour, ground ginger, and bicarbonate of soda. Stir to combine.

Step 3. Rub in the Butter

Add the cubed butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 4. Add Sugar and Golden Syrup

Stir the caster sugar into the mixture, then add the golden syrup. Mix until everything comes together to form a soft dough. If the dough is too sticky, add a little more flour.

Step 5. Shape the Biscuits

Roll small portions of dough into walnut-sized balls. Place them on the prepared baking sheet, leaving some space between each ball. Gently press down on each ball with your fingers or the back of a spoon to flatten slightly.

Step 6. Bake the Biscuits

Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the biscuits are golden brown around the edges.

Step 7. Cool and Serve

Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes. Transfer to a cooling rack to cool completely before serving. Enjoy your ginger biscuits with a cup of tea or coffee!
