Description

Ginger flapjacks are made with oats, golden syrup, butter, and brown sugar, infused with ground ginger and optional stem ginger for extra spice. Baked until golden, they are chewy and slightly crisp on the edges, making them an irresistible snack.


Ingredients

  • Butter (150g): Adds richness and helps bind the ingredients.
  • Light Brown Sugar (150g): Sweetens the flapjacks and adds a caramel-like flavor.
  • Golden Syrup (4 tbsp): Helps give the flapjacks their chewy texture.
  • Rolled Oats (250g): The main ingredient, providing structure and texture.
  • Ground Ginger (1 tsp): For a warm, spicy flavor.
  • Stem Ginger (2 tbsp, finely chopped, optional): Adds bursts of gingery sweetness.

Instructions

Step 1: Preheat the oven

Preheat your oven to 180°C (160°C fan) or 350°F. Line a baking tin with parchment paper.

Step 2: Melt the wet ingredients

In a saucepan over low heat, melt the butter, brown sugar, and golden syrup together. Stir until smooth and well combined.

Step 3: Add the dry ingredients

Remove the saucepan from the heat and stir in the rolled oats, ground ginger, and chopped stem ginger (if using). Mix until all the oats are evenly coated with the buttery mixture.

Step 4: Transfer to the baking tin

Pour the mixture into the prepared baking tin. Use the back of a spoon to press it down evenly into the tin.

Step 5: Bake the flapjacks

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. The center may still look slightly soft, but it will firm up as it cools.

Step 6: Cool and cut

Allow the flapjacks to cool in the tin for 10 minutes. While still warm, use a sharp knife to score them into squares or rectangles. Let them cool completely in the tin before removing and serving.
