To make 12 soft bread rolls, gather the following ingredients:

  • 500g (4 cups) strong white bread flour: Provides the structure and chew for the rolls.
  • 7g (1 packet) fast-action dried yeast: Helps the dough rise.
  • 10g (2 tsp) salt: Enhances the flavor.
  • 50g (¼ cup) unsalted butter, softened: Adds richness and softness to the dough.
  • 300ml (1 ¼ cups) lukewarm water: Hydrates the dough and activates the yeast.
  • 1 large egg (optional): For a shiny glaze on the rolls.

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, mix 500g (4 cups) bread flour, 7g dried yeast, and 10g salt together.
  2. Add the softened butter and rub it into the flour mixture until it resembles breadcrumbs.
  3. Gradually add the lukewarm water and mix until a soft dough forms.

Step 2: Knead the Dough

  1. Turn the dough out onto a floured surface and knead for 10 minutes, or until smooth and elastic. You can also knead the dough in a stand mixer with a dough hook for 5-7 minutes.

Step 3: First Rise

  1. Place the dough in a lightly greased bowl, cover with cling film or a kitchen towel, and leave it to rise in a warm place for 1-1 ½ hours, or until it has doubled in size.

Step 4: Shape the Rolls

  1. Once the dough has risen, punch it down to release the air.
  2. Divide the dough into 12 equal portions and shape each portion into a ball.
  3. Place the rolls on a parchment-lined baking tray, leaving space between each roll.

Step 5: Second Rise

  1. Cover the rolls with a kitchen towel and allow them to rise for another 30-45 minutes, or until doubled in size.

Step 6: Preheat the Oven

  1. While the rolls are rising, preheat your oven to 220°C (425°F).

Step 7: Glaze the Rolls (Optional)

  1. For a shiny finish, beat the egg and lightly brush the tops of the rolls with it using a pastry brush.

Step 8: Bake the Rolls

  1. Bake the rolls in the preheated oven for 15-18 minutes, or until they are golden brown and sound hollow when tapped.
  2. Remove the rolls from the oven and transfer them to a wire rack to cool slightly.
