Description

Mary Berry’s Toffee Marshmallow Squares are a simple no-bake dessert made with melted toffee and marshmallows mixed with crispy rice cereal. Once set, they are cut into squares for a deliciously chewy and crunchy treat that’s loved by kids and adults alike.


Ingredients

  • Butter – 75g, for richness and to hold the mixture together.
  • Toffees – 200g, melted to create a sweet base.
  • Mini marshmallows – 150g, for chewiness.
  • Rice cereal – 150g, adds crunch and structure.
  • Vanilla extract – 1 teaspoon, for added flavor.
  • Chocolate drizzle or sprinkles – Optional, for decoration.

Instructions

Step 1: Prepare the Baking Tin

  • Line an 8-inch square baking tin with parchment paper, ensuring it hangs over the edges for easy removal.

Step 2: Melt the Toffee and Butter

  • In a saucepan over low heat, melt the butter and toffees together, stirring constantly until smooth and fully combined.

Step 3: Add the Marshmallows

  • Remove the saucepan from heat and quickly stir in the mini marshmallows. Mix until they are partially melted and well-coated in the toffee mixture.

Step 4: Combine with Rice Cereal

  • In a large mixing bowl, add the rice cereal. Pour the toffee and marshmallow mixture over the cereal and stir until evenly coated.

Step 5: Press into the Tin

  • Transfer the mixture to the prepared baking tin. Use a spatula or the back of a spoon to press it down evenly into the tin.

Step 6: Cool and Set

  • Allow the mixture to cool at room temperature for about 1 hour, or until set. For quicker setting, place the tin in the refrigerator for 30 minutes.

Step 7: Cut into Squares

  • Once set, lift the mixture out of the tin using the parchment paper. Cut into squares with a sharp knife.
