Description
Winter coleslaw is a refreshing mix of finely shredded seasonal vegetables such as cabbage, carrots, and beets, tossed in a tangy dressing. It’s a healthier twist on traditional coleslaw, designed to complement the heavier dishes often served during the colder months.
Ingredients
For the Coleslaw
- Red Cabbage (1/2 head, finely shredded): Adds crunch and vibrant color.
- White Cabbage (1/4 head, finely shredded): Balances the texture and flavor.
- Carrots (2, grated): Adds sweetness and brightness.
- Beetroot (1, grated): For an earthy flavor and rich color.
- Apple (1, grated): Adds a touch of sweetness and freshness.
- Spring Onions (2, finely sliced): Add a mild onion flavor.
For the Dressing
- Olive Oil (3 tbsp): Forms the base of the dressing.
- Apple Cider Vinegar (2 tbsp): Adds tang and brightness.
- Dijon Mustard (1 tsp): Provides depth and a mild kick.
- Honey (1 tsp): Balances the tanginess with a hint of sweetness.
- Salt and Black Pepper (to taste): For seasoning.
Instructions
Step 1: Prepare the vegetables
Finely shred the red and white cabbage, grate the carrots and beetroot, and thinly slice the spring onions. Place all the vegetables in a large mixing bowl.
Step 2: Make the dressing
In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Step 3: Toss the coleslaw
Pour the dressing over the prepared vegetables and toss thoroughly to ensure everything is evenly coated.
Step 4: Serve
Transfer the coleslaw to a serving plate or bowl. Serve immediately or let it sit for 10-15 minutes to allow the flavors to meld.
