Bubble and Squeak is a classic British dish made by frying a mixture of mashed potatoes and leftover vegetables. Using an air fryer ensures a crisp, golden crust without the need for excessive oil, making it a healthier and easier version of this traditional favorite.

Ingredients

  • Mashed Potatoes (2 cups): Acts as the base of the patties.
  • Cooked Vegetables (1.5 cups, finely chopped): Use leftovers like cabbage, carrots, or Brussels sprouts.
  • Spring Onion (2, finely sliced): Adds a fresh, oniony flavor.
  • Plain Flour (2 tbsp): Helps bind the mixture.
  • Salt and Black Pepper (to taste): For seasoning.
  • Olive Oil Spray (optional): For extra crispiness.

Instructions

Step 1: Prepare the mixture

In a large mixing bowl, combine the mashed potatoes, cooked vegetables, spring onions, flour, salt, and black pepper. Mix until evenly combined.

Step 2: Shape the patties

Divide the mixture into equal portions and shape them into round patties, about 1 inch thick. Place them on a plate or tray.

Step 3: Preheat the air fryer

Preheat your air fryer to 200°C (400°F) for 3-5 minutes.

Step 4: Cook the patties

Lightly spray the air fryer basket with non-stick cooking spray. Arrange the patties in a single layer, ensuring they don’t overlap. Lightly spray the tops with olive oil for extra crispiness. Cook for 10-12 minutes, flipping halfway through, until golden and crisp.

Step 5: Serve

Remove the patties from the air fryer and serve immediately as a side dish or main course.
