Description

James Martin’s American pancakes are thick, fluffy pancakes made with buttermilk and baking powder, giving them a light and airy texture. They are cooked until golden brown and served with fresh blueberries, maple syrup, and butter for a classic American breakfast experience.

Ingredients

For the Pancakes:

  • Plain Flour (200g) – Provides structure.
  • Baking Powder (2 tsp) – Helps the pancakes rise and become fluffy.
  • Caster Sugar (2 tbsp) – Adds a touch of sweetness.
  • Buttermilk (250ml) – Keeps the pancakes light and tangy.
  • Eggs (2, large) – Adds richness and binds the batter.
  • Milk (50ml, if needed) – Adjusts the batter consistency.
  • Unsalted Butter (50g, melted) – For richness and a soft texture.
  • Vanilla Extract (1 tsp, optional) – Adds a hint of sweetness.
  • Fresh Blueberries (150g) – Bursts of fruity goodness in each bite.
  • Pinch of Salt – Enhances all the flavors.

For Cooking:

  • Butter or Oil (for frying) – Prevents sticking and adds flavor.

For Serving:

  • Maple Syrup – Classic pancake topping.
  • Extra Fresh Blueberries – For garnish.
  • Greek Yogurt or Whipped Cream – Adds creaminess.
  • Powdered Sugar (for dusting, optional) – A touch of sweetness.

Optional Additions:

  • Lemon Zest (½ tsp) – Adds freshness.
  • Chocolate Chips (50g) – For a sweet twist.
  • Cinnamon (½ tsp) – Adds warmth.

Instructions

Step 1: Prepare the Pancake Batter

  1. In a large mixing bowl, whisk together flour, baking powder, sugar, and a pinch of salt.
  2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract (if using).
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently.
  4. If the batter is too thick, add a splash of milk (about 50ml) until it reaches a thick, but pourable consistency.
  5. Gently fold in blueberries, being careful not to overmix.

Step 2: Cook the Pancakes

  1. Heat a non-stick frying pan or griddle over medium heat and add a little butter or oil.
  2. Using a ladle or measuring cup, pour small rounds of batter into the pan, about 10cm wide.
  3. Cook for 2-3 minutes or until small bubbles form on the surface and the edges look set.
  4. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  5. Transfer to a warm plate and repeat with the remaining batter.

Step 3: Serve and Enjoy

  1. Stack the pancakes and top with fresh blueberries.
  2. Drizzle with maple syrup and add a dollop of Greek yogurt or whipped cream.
  3. Optionally, dust with powdered sugar for an elegant finish.
