Ingredients

Instructions
Step 1: Prepare the Pancake Batter
- In a large mixing bowl, whisk together flour, baking powder, sugar, and a pinch of salt.
- In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract (if using).
- Gradually pour the wet ingredients into the dry ingredients, stirring gently.
- If the batter is too thick, add a splash of milk (about 50ml) until it reaches a thick, but pourable consistency.
- Gently fold in blueberries, being careful not to overmix.
Step 2: Cook the Pancakes
- Heat a non-stick frying pan or griddle over medium heat and add a little butter or oil.
- Using a ladle or measuring cup, pour small rounds of batter into the pan, about 10cm wide.
- Cook for 2-3 minutes or until small bubbles form on the surface and the edges look set.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Transfer to a warm plate and repeat with the remaining batter.
