Ingredients
- 3 ripe medium tomatoes (or heirloom variety) – Sliced thick
- 200g fresh mozzarella (or buffalo mozzarella) – Drained and sliced
- A handful of fresh basil leaves – Torn or left whole
- 2 tbsp extra virgin olive oil – For drizzling
- 1 tbsp balsamic vinegar (optional) – For added depth
- Sea salt and freshly ground black pepper – To taste
Instructions
Cut the tomatoes into thick slices, about ½-inch thick. Slice the mozzarella into similar-sized pieces.
Arrange the tomato and mozzarella slices on a serving plate, alternating them in a row or a circle. Tuck whole or torn basil leaves between the layers.
Drizzle olive oil evenly over the salad. If using, add a light drizzle of balsamic vinegar. This adds a gentle tang that complements the sweetness of the tomatoes.
Sprinkle with sea salt and freshly ground black pepper. Serve immediately, while the ingredients are fresh and at room temperature.
