Instructions
Step 1: Prepare the Meatloaf Mixture
- In a mixing bowl, combine the ground beef, ground pork, chopped onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, parsley, salt, and pepper.
- Mix gently with your hands or a spoon until just combined. Avoid overmixing to keep the meatloaf tender.
Step 2: Shape the Meatloaf
- Preheat your oven to 180°C (160°C fan) or 350°F.
- Lightly grease a loaf tin or line a baking tray with parchment paper. Shape the meat mixture into a loaf and place it in the tin or on the tray.
Step 3: Prepare the Glaze
- In a small saucepan, combine ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Cook over low heat, stirring, until the sugar dissolves and the glaze is smooth.
Step 4: Glaze the Meatloaf
- Brush half of the glaze over the meatloaf, reserving the rest for later.
Step 5: Bake the Meatloaf
- Cover the meatloaf loosely with foil and bake for 45 minutes.
- Remove the foil, brush with the remaining glaze, and bake for an additional 15 minutes or until the internal temperature reaches 70°C (160°F).
Step 6: Rest and Serve
- Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm with your favorite sides.
