Gordon Ramsay’s Meatloaf is a savory dish made with a combination of ground beef and pork, mixed with breadcrumbs, eggs, and flavorful seasonings. The meatloaf is baked to perfection and topped with a sweet and tangy glaze for a delicious finish.

Ingredients

For the Meatloaf:

  • Ground beef – 500g, for richness.
  • Ground pork – 250g, for added flavor.
  • Onion – 1 large, finely chopped, for sweetness.
  • Garlic cloves – 2, minced, for aroma.
  • Breadcrumbs – 100g, to bind the mixture.
  • Eggs – 2 large, for structure.
  • Milk – 2 tablespoons, for moisture.
  • Worcestershire sauce – 1 tablespoon, for depth.
  • Fresh parsley – 2 tablespoons, chopped, for freshness.
  • Salt and black pepper – To taste.

For the Glaze:

  • Ketchup – 4 tablespoons, for sweetness.
  • Brown sugar – 2 tablespoons, for a caramelized finish.
  • Dijon mustard – 1 teaspoon, for tanginess.
  • Apple cider vinegar – 1 teaspoon, for balance.

Instructions

Step 1: Prepare the Meatloaf Mixture

  • In a mixing bowl, combine the ground beef, ground pork, chopped onion, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, parsley, salt, and pepper.
  • Mix gently with your hands or a spoon until just combined. Avoid overmixing to keep the meatloaf tender.

Step 2: Shape the Meatloaf

  • Preheat your oven to 180°C (160°C fan) or 350°F.
  • Lightly grease a loaf tin or line a baking tray with parchment paper. Shape the meat mixture into a loaf and place it in the tin or on the tray.

Step 3: Prepare the Glaze

  • In a small saucepan, combine ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Cook over low heat, stirring, until the sugar dissolves and the glaze is smooth.

Step 4: Glaze the Meatloaf

  • Brush half of the glaze over the meatloaf, reserving the rest for later.

Step 5: Bake the Meatloaf

  • Cover the meatloaf loosely with foil and bake for 45 minutes.
  • Remove the foil, brush with the remaining glaze, and bake for an additional 15 minutes or until the internal temperature reaches 70°C (160°F).

Step 6: Rest and Serve

  • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm with your favorite sides.
