Anglesey Eggs, also known as Wyau Ynys Môn, is a traditional dish from Wales. It features a base of buttery mashed potatoes mixed with sautéed leeks, topped with hard-boiled eggs, and smothered in a cheesy béchamel sauce before being baked to perfection. The Hairy Bikers’ version stays true to its roots while making it accessible for modern kitchens.
Ingredients
For the Base:
- Potatoes (1kg, peeled): For the creamy mashed base.
- Leeks (2 large): Sliced and sautéed for sweetness.
- Butter (50g): For richness in the mash.
- Milk (100ml): To create smooth mashed potatoes.
- Salt and pepper: To taste.
For the Eggs:
- Eggs (6, hard-boiled): Peeled and halved.
For the Cheese Sauce:
- Butter (50g): Forms the base of the béchamel.
- Plain flour (50g): Thickens the sauce.
- Milk (500ml): The liquid base for the sauce.
- Cheddar cheese (150g, grated): Adds a rich, cheesy flavor.
- Mustard (1 teaspoon): Optional, for added depth.
- Salt and pepper: To season.
For the Topping:
- Breadcrumbs (50g): For a golden, crispy finish.
- Cheddar cheese (50g, grated): For extra cheesiness.
Instructions
Step 1: Prepare the potatoes and leeks
- Boil the potatoes in salted water for 15–20 minutes until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
- In a frying pan, sauté the sliced leeks in a knob of butter over medium heat until softened. Stir the leeks into the mashed potatoes and mix well.
Step 2: Boil the eggs
- Place the eggs in a pot of boiling water and cook for 8–10 minutes. Cool under cold water, peel, and halve.
Step 3: Make the cheese sauce
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in the milk, ensuring no lumps form. Simmer until thickened.
- Stir in the grated cheese and mustard (if using), and season with salt and pepper.
Step 4: Assemble the dish
- Preheat your oven to 200°C (400°F).
- Spread the potato and leek mixture evenly into an ovenproof dish. Arrange the halved eggs on top, cut side up.
- Pour the cheese sauce over the eggs and potatoes, ensuring everything is well-covered.
Step 5: Add the topping
- Sprinkle the breadcrumbs and grated cheese over the sauce.
Step 6: Bake
- Bake in the preheated oven for 20–25 minutes, or until the top is golden and bubbling.
Step 7: Serve
- Allow to cool slightly before serving. Pair with a fresh green salad or steamed vegetables for a complete meal.
