Ingredients

For the Chili Beef Filling:

  • Minced beef: 500g of lean minced beef for the base.
  • Onion: 1 large onion, finely chopped.
  • Garlic: 2 cloves, minced.
  • Chopped tomatoes: 1 can (400g), for a rich tomato sauce.
  • Tomato puree: 2 tablespoons, to intensify the tomato flavor.
  • Kidney beans: 1 can (400g), drained and rinsed.
  • Red chili: 1-2 fresh chilies, chopped, depending on your heat preference.
  • Ground cumin: 1 teaspoon, for warmth and depth.
  • Ground coriander: 1 teaspoon, for added flavor.
  • Paprika: 1 teaspoon, to give the chili a smoky note.
  • Beef stock: 200ml, to add richness to the sauce.
  • Olive oil: 1-2 tablespoons, for frying.
  • Salt and pepper: To taste.

For the Crumble Topping:

  • Plain flour: 150g, for the crumble base.
  • Butter: 75g, cold and cubed, to make the crumble topping.
  • Cheddar cheese: 100g, grated, for a cheesy, golden finish.
  • Breadcrumbs: 50g, to add extra crunch to the topping.
  • Chili flakes (optional): ½ teaspoon, for a bit of heat in the topping.

Instructions

1. Prepare the Chilli Beef Filling

  1. Cook the Onions and Garlic: Heat olive oil in a large pan over medium heat. Add the chopped onions and garlic, cooking until soft and translucent.
  2. Brown the Minced Beef: Add the minced beef to the pan and cook until browned, breaking it up with a spoon as it cooks.
  3. Add the Spices: Stir in the cumin, coriander, paprika, and chopped chilies. Cook for 1-2 minutes until the spices are fragrant.
  4. Add Tomatoes and Stock: Pour in the chopped tomatoes, tomato puree, and beef stock. Bring to a simmer and cook for 20 minutes, allowing the flavors to meld together.
  5. Add the Beans: Stir in the drained kidney beans and cook for another 5 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

2. Prepare the Crumble Topping

  1. Make the Crumble: In a large mixing bowl, rub the cold butter into the flour using your fingers until the mixture resembles breadcrumbs.
  2. Add Cheese and Breadcrumbs: Stir in the grated cheddar cheese and breadcrumbs. If you like a little extra heat, add the chili flakes at this point.

3. Assemble and Bake the Chilli Beef Crumble

  1. Layer the Dish: Transfer the cooked chili beef mixture into a baking dish, spreading it out evenly.
  2. Top with Crumble: Sprinkle the crumble mixture evenly over the top of the beef.
  3. Bake: Place the dish in a preheated oven at 180°C (350°F) and bake for 25-30 minutes or until the topping is golden brown and crispy.
