  • Salt and pepper: To taste, for seasoning.

Instructions

1. Make the Pastry

  1. Combine the Ingredients: In a large mixing bowl, rub the cold butter into the flour and salt using your fingertips until the mixture resembles breadcrumbs.
  2. Form the Dough: Add cold water 1 tablespoon at a time, stirring with a fork until the dough begins to come together. Gather it into a ball, wrap in cling film, and refrigerate for at least 30 minutes.

2. Prepare the Filling

  1. Boil the Potatoes: Place the potatoes in a saucepan of salted water, bring to a boil, and cook for about 10-15 minutes, or until just tender. Drain and set aside to cool slightly.
  2. Cook the Onions and Garlic: In a frying pan, melt the butter over medium heat. Add the onions and garlic and cook until softened, about 10 minutes. Season with salt and pepper.

3. Assemble the Pie
