Hairy Bikers Macaroni Cheese is a classic British pasta bake featuring al dente macaroni tossed in a rich, cheesy white sauce and baked until bubbling and golden. 300g macaroni pasta
50g butter
50g plain flour
600ml full-fat milk
1 tsp English mustard
150g mature cheddar cheese, grated
50g Parmesan cheese, grated
Salt and black pepper, to taste
50g breadcrumbs (optional)
Optional: a pinch of nutmeg or cayenne for extra warmth
Bring a large pot of salted water to a boil.
Add macaroni and cook until just tender (al dente). Drain and set aside.
In a saucepan, melt butter over medium heat.
Stir in the flour to form a roux and cook for 1–2 minutes.
Gradually whisk in milk, stirring constantly until the sauce thickens.
Remove from heat and stir in mustard, cheddar, and half the Parmesan.
Season with salt, pepper, and optional nutmeg or cayenne.
Add cooked macaroni to the cheese sauce and mix well.
Transfer to a greased baking dish.
Preheat oven to 200°C (180°C fan) or 400°F.
Sprinkle the remaining Parmesan and breadcrumbs on top.
Bake for 20–25 minutes or until golden and bubbling.
