Hairy Bikers Macaroni Cheese

Hairy Bikers Macaroni Cheese is a classic British pasta bake featuring al dente macaroni tossed in a rich, cheesy white sauce and baked until bubbling and golden. What sets it apart is the generous blend of mature cheddar and other flavorful cheeses, often with a hint of mustard and a golden breadcrumb topping for extra crunch.

Ingredients

  • 300g macaroni pasta

  • 50g butter

  • 50g plain flour

  • 600ml full-fat milk

  • 1 tsp English mustard

  • 150g mature cheddar cheese, grated

  • 50g Parmesan cheese, grated

  • Salt and black pepper, to taste

  • 50g breadcrumbs (optional)

  • Optional: a pinch of nutmeg or cayenne for extra warmth

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.

  • Add macaroni and cook until just tender (al dente). Drain and set aside.

Step 2: Make the Cheese Sauce

  • In a saucepan, melt butter over medium heat.

  • Stir in the flour to form a roux and cook for 1–2 minutes.

  • Gradually whisk in milk, stirring constantly until the sauce thickens.

Step 3: Add Cheese and Seasoning

  • Remove from heat and stir in mustard, cheddar, and half the Parmesan.

  • Season with salt, pepper, and optional nutmeg or cayenne.

Step 4: Combine Pasta and Sauce

  • Add cooked macaroni to the cheese sauce and mix well.

  • Transfer to a greased baking dish.

Step 5: Top and Bake

  • Preheat oven to 200°C (180°C fan) or 400°F.

  • Sprinkle the remaining Parmesan and breadcrumbs on top.

  • Bake for 20–25 minutes or until golden and bubbling.
