Mississippi Mud Pie is a famous American dessert made with a chocolate cookie crust, a rich and gooey chocolate filling, and often topped with whipped cream. For the Crust:
- 250g Chocolate Digestive Biscuits (about 2 cups crushed)
- 100g Unsalted Butter, melted (about 1/2 cup)
For the Filling:
- 150g Dark Chocolate (at least 70% cocoa), chopped (about 1 cup)
- 150g Unsalted Butter (about 3/4 cup)
- 200g Light Brown Sugar (about 1 cup)
- 4 Large Eggs, beaten
- 2 tbsp Cocoa Powder
- 1 tsp Vanilla Extract
- 200ml Double Cream (about 3/4 cup)
For the Topping:
- Whipped Cream
- Chocolate Shavings or Cocoa Powder (optional)
Instructions
1. Prepare the Crust
- Crush the Biscuits: Using a food processor, crush the chocolate digestive biscuits into fine crumbs. Alternatively, you can place them in a sealed plastic bag and crush them with a rolling pin.
- Combine with Butter: In a bowl, mix the crushed biscuits with the melted butter until fully combined.
- Press into Pie Dish: Press the biscuit mixture into the base and up the sides of a 9-inch pie dish. Use the back of a spoon to smooth it out. Place the crust in the fridge to chill while you prepare the filling.
2. Make the Chocolate Filling
- Melt the Chocolate and Butter: In a saucepan, gently melt the dark chocolate and butter over low heat, stirring occasionally until smooth.
- Add Sugar and Eggs: Once melted, remove from heat and stir in the light brown sugar, followed by the beaten eggs, whisking quickly to prevent the eggs from scrambling.
- Add Cocoa Powder and Vanilla: Sift in the cocoa powder and stir in the vanilla extract.
- Add Cream: Slowly pour in the double cream, whisking until the mixture is smooth and fully combined.
3. Bake the Pie
- Pour the Filling into the Crust: Once the filling is ready, pour it into the chilled biscuit crust.
- Bake: Preheat the oven to 180°C (350°F) and bake the pie for 35-40 minutes, or until the filling is set but still slightly wobbly in the center. The top may crack slightly, which is normal.
- Cool: Allow the pie to cool completely, then place it in the fridge to chill for at least 2 hours before serving.
4. Add the Topping
- Whipped Cream: Once the pie is chilled, top it with a generous layer of whipped cream.
- Optional Garnish: You can also garnish with chocolate shavings or a light dusting of cocoa powder for extra indulgence.
