Description

Hairy Bikers’ Sausage Rolls are made with high-quality sausage meat encased in flaky puff pastry, baked until golden and crisp. The filling is seasoned with herbs and a hint of spice, making these homemade sausage rolls far superior to store-bought versions.


Ingredients

For the Sausage Filling

  • Sausage Meat (500g) – The main filling, is rich and juicy.
  • Onion (1 small, finely chopped) – Adds depth of flavor.
  • Fresh Sage (1 tbsp, chopped) – Classic herb for sausage rolls.
  • Breadcrumbs (50g) – Helps bind the filling and keep it moist.
  • English Mustard (1 tsp) – Adds a slight kick.
  • Salt and Black Pepper (to taste)

For the Pastry

  • Ready-Made Puff Pastry (1 sheet, chilled) – For a flaky, golden crust.
  • Egg (1, beaten) – For glazing, give the rolls a shiny finish.
  • Sesame Seeds (optional, for topping) – Adds a slight crunch.

Instructions

Step 1: Preheat the oven

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2: Prepare the filling

In a large mixing bowl, combine the sausage meat, chopped onion, fresh sage, breadcrumbs, mustard, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Step 3: Roll out the pastry

Lightly flour a surface and roll out the puff pastry into a large rectangle if needed. Cut it in half lengthwise to create two long strips.

Step 4: Shape the sausage rolls

Divide the sausage mixture into two equal portions. Place each portion along the center of each pastry strip, forming a long sausage shape.

Step 5: Seal and cut the rolls

Brush the edges of the pastry with beaten egg. Fold the pastry over the sausage meat and press the edges to seal. Use a fork to crimp the edges, then cut into smaller rolls (about 6-8 per strip).

Step 6: Glaze and bake

Place the sausage rolls onto the prepared baking sheet. Brush the tops with the remaining beaten egg and sprinkle with sesame seeds if using. Bake for 20-25 minutes or until golden brown and crisp.

Step 7: Serve

 

Let the sausage rolls cool slightly before serving. Enjoy warm or at room temperature with your favorite dipping sauces.
