The Hairy Bikers’ Shepherd’s Pie is a traditional British dish made with minced lamb, carrots, onions, peas, and a thick, flavorful gravy, topped with creamy mashed potatoes. Unlike Cottage Pie, which is made with beef, Shepherd’s Pie uses lamb for a richer, more authentic taste.

Ingredients

For the Lamb Filling:

  • Minced Lamb (500g, preferably 20% fat) – Rich and flavorful.
  • Onion (1 large, finely chopped) – Adds sweetness and depth.
  • Carrots (2, diced) – Provides texture and slight sweetness.
  • Celery (2 sticks, finely chopped, optional) – Adds an aromatic crunch.
  • Garlic (2 cloves, minced) – Enhances the flavor.
  • Tomato Purée (1 tbsp) – Intensifies the richness.
  • Worcestershire Sauce (2 tbsp) – Adds umami depth.
  • Lamb or Beef Stock (400ml) – Creates a deep, rich gravy.
  • Peas (100g, frozen or fresh) – Adds color and texture.
  • Thyme (1 tsp, dried or fresh leaves) – Complements the lamb.
  • Bay Leaf (1, optional) – Infuses extra aroma.
  • Salt and Black Pepper (to taste) – Enhances seasoning.
  • Olive Oil (1 tbsp) – For sautéing.
  • Flour (1 tbsp) – Helps thicken the sauce.

For the Mashed Potato Topping:

  • Potatoes (1kg, floury type like Maris Piper) – Best for smooth mash.
  • Butter (50g, unsalted) – Adds creaminess.
  • Milk (100ml, warm) – This makes the mash soft.
  • Cheddar Cheese (50g, grated, optional) – Creates a golden crust.
  • Salt and Black Pepper (to taste) – Balances the flavors.

Optional Additions:

  • Leeks (1 small, finely chopped) – For extra flavor.
  • Dijon Mustard (1 tsp) – This adds a slight tang to the mash.

Instructions

Step 1: Cook the Lamb Filling

  1. Heat olive oil in a large pan over medium heat. Add onions, carrots, and celery, cooking for 5 minutes until softened.
  2. Stir in the garlic and cook for another minute.
  3. Add the minced lamb, breaking it up with a wooden spoon, and cook until browned (about 5-7 minutes).
  4. Stir in the tomato purée, Worcestershire sauce, and flour, mixing well.
  5. Pour in the stock (and red wine if using), add thyme, bay leaf, and peas, and bring to a simmer.
  6. Reduce heat and let cook for 20-25 minutes, stirring occasionally. Season with salt and black pepper.

Step 2: Make the Mashed Potato Topping

  1. Peel and chop the potatoes into chunks. Boil in salted water for 15-20 minutes until fork-tender.
  2. Drain and mash with butter, warm milk, salt, and black pepper until smooth.
  3. Stir in cheddar cheese (if using) for extra richness.

Step 3: Assemble and Bake

  1. Preheat oven to 200°C (400°F).
  2. Spoon the lamb filling into an ovenproof dish, spreading it evenly.
  3. Carefully spread the mashed potatoes over the top, smoothing with a fork to create texture.
  4. Sprinkle extra cheese on top (if using).
  5. Bake for 25-30 minutes until golden and bubbling.

Step 4: Serve and Enjoy

  1. Let the pie rest for 5 minutes before serving.
  2. Serve with steamed greens, roasted vegetables, or a side salad.
