The rich sauce is made using tomatoes, garlic, and ginger, creating a balance of spices and creaminess. Ingredients

  • Cooked turkey (500g / 1 lb): Shredded or cut into bite-sized pieces.
  • Onion (1 large): Finely chopped, adds sweetness and depth.
  • Garlic cloves (3): Minced for aromatic flavor.
  • Fresh ginger (1-inch piece): Grated, bringing warmth and zest.
  • Cumin seeds (1 tsp): Adds earthy, nutty flavor.
  • Ground coriander (1 tsp): Balances the heat with a bright, citrusy note.
  • Ground turmeric (½ tsp): Provides color and subtle bitterness.
  • Garam masala (1 tsp): A blend of warming spices that deepens the flavor.
  • Tomatoes (400g / 14 oz can): Forms the tangy base of the curry sauce.
  • Coconut milk (200ml / ¾ cup): Adds creaminess and richness to the sauce.
  • Vegetable oil (2 tbsp): For sautéing the onion and spices.
  • Fresh coriander (a handful): Chopped, for garnishing.
  • Salt and pepper: To taste, for seasoning.

Instructions

  1. Prepare the base: Heat the vegetable oil in a large frying pan over medium heat. Add the chopped onion and cook for 5-7 minutes, until softened and golden.
  2. Add garlic and ginger: Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  3. Toast the spices: Add the cumin seeds, ground coriander, turmeric, and garam masala. Cook for 1-2 minutes, stirring constantly, to release the flavors of the spices.
  4. Add the tomatoes: Stir in the canned tomatoes and simmer for 5 minutes, allowing the sauce to thicken slightly.
  5. Add the turkey: Add the shredded turkey to the pan, stirring to coat it in the sauce. Let the turkey heat through for about 5 minutes.
  6. Add coconut milk: Pour in the coconut milk and bring the curry to a simmer. Cook for another 10 minutes, allowing the flavors to meld together.
