The ingredients are baked together in a casserole dish, creating a balanced and satisfying meal with layers of flavor. This casserole can be served as a breakfast main or a savory brunch dish and pairs well with a variety of sides.
Ingredients
- 8 breakfast sausages – Provides a savory, juicy base for the casserole.
- 2 large apples (peeled, cored, and sliced) – Use tart apples like Granny Smith or Braeburn for balance.
- 1 large onion (sliced) – Adds sweetness and depth of flavor.
- 1 tbsp olive oil – For browning the sausages and vegetables.
- 1 tbsp fresh thyme leaves – Adds a hint of earthy flavor.
- Salt and pepper – To season the dish.
- 200ml apple cider or chicken stock – Adds moisture and a subtle sweetness.
- 1 tbsp Dijon mustard – For a slight tangy kick.
- 2 tsp brown sugar (optional) – To enhance the sweetness of the apples and cider.
- Fresh parsley (chopped, for garnish) – Adds a fresh, vibrant finish.
Instructions
Step 1: Preheat the Oven
Preheat your oven to 180°C (350°F).
Step 2: Brown the Sausages
In a large frying pan, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 5-7 minutes. Once browned, transfer them to the casserole dish.
Step 3: Sauté the Onions and Apples
In the same pan, add the sliced onions and cook for about 3 minutes until they start to soften. Add the sliced apples and cook for another 3-4 minutes until the apples are slightly softened. Season with a pinch of salt and pepper.
Step 4: Add the Thyme, Cider, and Mustard
Stir the fresh thyme, cider (or chicken stock), Dijon mustard, and brown sugar (if using) into the onion and apple mixture. Let it simmer for 2-3 minutes to combine the flavors.
Step 5: Combine and Bake
Pour the apple and onion mixture over the sausages in the casserole dish, spreading it evenly. Cover the casserole dish with a lid or foil and bake in the preheated oven for 30-35 minutes, or until the sausages are fully cooked and the apples are tender.
Step 6: Garnish and Serve
Remove the casserole from the oven and let it cool slightly. Sprinkle with fresh parsley and serve warm. Enjoy it as is or pair with crusty bread, roasted potatoes, or scrambled eggs for a complete meal.
