Description

Jamie Oliver’s 5 Ingredients Chicken Thighs recipe is a straightforward yet flavorful dish where chicken thighs are cooked to crispy perfection, and seasoned with just a handful of pantry staples. The recipe focuses on simplicity while delivering rich, delicious flavors. It’s a versatile dish that can be served with a variety of sides, from salad to potatoes, making it a go-to option for both quick meals and entertaining guests.

Ingredients

  • Chicken thighs (4-6): Skin-on and bone-in for maximum flavor and crispiness.
  • Olive oil (2 tbsp): To help crisp up the chicken skin and add a slight richness.
  • Garlic (4 cloves): Crushed, for an aromatic base.
  • Cherry tomatoes (200g / 7 oz): Provides a sweet and juicy contrast to the savory chicken.
  • Balsamic vinegar (2 tbsp): Adds acidity and sweetness to balance the dish.

Instructions

  1. Preheat the oven: Preheat your oven to 200°C (400°F).
  2. Season and prepare the chicken: Drizzle the chicken thighs with a little olive oil and season them generously with salt and pepper. Heat a large ovenproof frying pan over medium heat and place the chicken thighs skin-side down. Cook for 5-7 minutes, until the skin is golden and crispy.
  3. Add garlic and tomatoes: Turn the chicken thighs over in the pan, then add the crushed garlic and cherry tomatoes around the chicken. Let them cook for 2-3 minutes.
  4. Drizzle with balsamic vinegar: Pour the balsamic vinegar over the tomatoes and garlic, stirring to coat them in the vinegar. The balsamic will begin to caramelize, adding a rich, tangy flavor to the dish.
  5. Roast in the oven: Transfer the entire pan to the preheated oven and roast for 20-25 minutes, until the chicken is fully cooked through and the tomatoes are bursting with flavor.
  6. Serve: Remove from the oven and let the chicken rest for a few minutes before serving. Spoon the roasted tomatoes and garlic over the chicken thighs and enjoy!
